Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup raspberries (fresh or frozen)
  • 1 cup butter (for frosting)
  • 4 cups powdered sugar
  • 1/2 cup raspberry puree


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla, and mix until well combined. Stir in boiling water until smooth.
  4. Divide the batter evenly between the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  7. For the frosting, beat the butter until creamy, then gradually add powdered sugar and raspberry puree until smooth.
  8. Once the cakes are cooled, spread frosting between layers and on top and sides of the cake.
  9. Decorate with fresh raspberries if desired.
