Description
Delightful chocolate cookies filled with cherry jam and topped with smooth chocolate ganache.
Ingredients
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1/2 cup cherry jam
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa, baking powder, and salt.
- In another bowl, beat the butter, granulated sugar, and brown sugar until creamy.
- Add the egg and vanilla extract, then mix until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
- Press your thumb into the center of each cookie to make an indentation.
- Bake in the preheated oven for 10-12 minutes.
- Meanwhile, in a small saucepan, heat the heavy cream until just simmering and pour it over the chocolate chips. Stir until smooth to make the ganache.
- After the cookies have cooled for a few minutes, fill each thumbprint with cherry jam and top with chocolate ganache.
- Let the cookies cool completely before serving.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months.
