Ingredients
- 2 cups cooked chicken breast, shredded
- 1 ripe mango, thinly sliced
- 1 cup shredded carrots
- 1 cucumber, julienned
- 2 tablespoons fresh cilantro, chopped
- 8–10 rice paper wrappers
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1 teaspoon sesame oil
Instructions
- Prepare all fillings: shred chicken, slice mango, and cut vegetables. (10 minutes)
- In a small bowl, whisk soy sauce, lime juice, honey, and sesame oil. (3 minutes)
- Lightly dip one rice paper wrapper in warm water until softened. (10 seconds each)
- Place chicken, mango, carrots, cucumber, and cilantro in the center. (2 minutes)
- Drizzle with a little dressing, then fold and roll tightly into a bundle. (3 minutes)
- Repeat with remaining wrappers and fillings. (5 minutes)
- Serve fresh with extra dipping sauce on the side. (1 minute)
