Ingredients
- 4 chicken thighs
- 2 cups canned tomatoes
- 1 bell pepper, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium-high heat.
- Season the chicken thighs with salt and pepper, then brown them on both sides in the pot. Remove and set aside.
- In the same pot, add the onions, bell peppers, and garlic. Sauté until softened.
- Return the chicken to the pot and add the canned tomatoes, oregano, and basil.
- Bring to a simmer, cover, and cook for about 30-40 minutes until the chicken is cooked through.
- Serve hot, garnished with fresh parsley.
Notes
You can switch chicken thighs for breasts for a lighter option or try different herbs for a unique flavor.
