Description

A hearty and flavorful one-pot dish featuring tender chicken, savory tomatoes, and fragrant herbs.


Ingredients

  • 4 chicken thighs
  • 2 cups canned tomatoes
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Season the chicken thighs with salt and pepper, then brown them on both sides in the pot. Remove and set aside.
  3. In the same pot, add the onions, bell peppers, and garlic. Sauté until softened.
  4. Return the chicken to the pot and add the canned tomatoes, oregano, and basil.
  5. Bring to a simmer, cover, and cook for about 30-40 minutes until the chicken is cooked through.
  6. Serve hot, garnished with fresh parsley.

Notes

You can switch chicken thighs for breasts for a lighter option or try different herbs for a unique flavor.
