Description

Ingredients

  • Chicken thighs or breasts
  • Olive oil
  • Onion
  • Bell peppers
  • Garlic
  • Canned tomatoes
  • Chicken broth
  • Red wine
  • Oregano
  • Basil
  • Salt
  • Black pepper
  • Pasta or rice (for serving)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken and brown on all sides. Remove and set aside.
  3. In the same skillet, add onion, bell peppers, and garlic; sauté until softened.
  4. Stir in the canned tomatoes, chicken broth, and red wine.
  5. Return the chicken to the skillet and season with oregano, basil, salt, and pepper.
  6. Cover and simmer for about 30-40 minutes until the chicken is cooked through.
  7. Serve the chicken over cooked pasta or rice.
