Description

A creamy and delicious chicken dish featuring fresh spinach and mushrooms in a rich Parmesan sauce, perfect for any occasion.


Ingredients

  • 2 chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Olive oil
  • Pasta or rice for serving


Instructions

  1. In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  2. In the same skillet, add garlic and mushrooms. Sauté until the mushrooms are tender.
  3. Add spinach and cook until wilted.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  5. Slice the chicken and return it to the skillet, coating it in the sauce.
  6. Serve over cooked pasta or rice, garnished with more Parmesan if desired.

Notes

For best flavor, use fresh spinach and adjust garlic and Parmesan to taste. To lighten the dish, substitute half-and-half for heavy cream.
