Ingredients
- 4 large eggs
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (bell peppers, onions, and bean sprouts)
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Cooking oil for frying
- Gravy (optional) for serving
Instructions
- In a bowl, beat the eggs and mix in the soy sauce, cornstarch, salt, and pepper.
- Stir in the cooked chicken and mixed vegetables.
- Heat oil in a frying pan over medium heat.
- Pour a scoop of the egg mixture into the pan, spreading it into a pancake shape.
- Cook until golden brown on both sides, about 2-3 minutes per side.
- Repeat with the remaining mixture.
- Serve topped with gravy, if desired.
Notes
Ensure the oil is hot for a crispy texture. Leftover cooked chicken works great!
