Description

A tasty and light dish combining fluffy eggs, chicken, and mixed vegetables.


Ingredients

  • 4 large eggs
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (bell peppers, onions, and bean sprouts)
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Cooking oil for frying
  • Gravy (optional) for serving


Instructions

  1. In a bowl, beat the eggs and mix in the soy sauce, cornstarch, salt, and pepper.
  2. Stir in the cooked chicken and mixed vegetables.
  3. Heat oil in a frying pan over medium heat.
  4. Pour a scoop of the egg mixture into the pan, spreading it into a pancake shape.
  5. Cook until golden brown on both sides, about 2-3 minutes per side.
  6. Repeat with the remaining mixture.
  7. Serve topped with gravy, if desired.

Notes

Ensure the oil is hot for a crispy texture. Leftover cooked chicken works great!
