A quick and easy Chicken Chop Suey that combines tender chicken with colorful vegetables in a savory sauce, perfect for busy weeknights.
Ingredients
- 1 lb chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, carrots, snow peas)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix the chicken with soy sauce, oyster sauce, cornstarch, salt, and pepper. Allow to marinate for 15 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add garlic and ginger; sauté for 30 seconds until fragrant.
- Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes.
- Add the mixed vegetables and stir-fry for an additional 3-5 minutes until tender-crisp.
- Serve hot over rice or noodles.
Notes
Best served immediately while hot. Can be garnished with green onions or sesame seeds.
