Description

A quick and easy Chicken Chop Suey that combines tender chicken with colorful vegetables in a savory sauce, perfect for busy weeknights.


Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, carrots, snow peas)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


Instructions

  1. In a bowl, mix the chicken with soy sauce, oyster sauce, cornstarch, salt, and pepper. Allow to marinate for 15 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add garlic and ginger; sauté for 30 seconds until fragrant.
  4. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes.
  5. Add the mixed vegetables and stir-fry for an additional 3-5 minutes until tender-crisp.
  6. Serve hot over rice or noodles.

Notes

Best served immediately while hot. Can be garnished with green onions or sesame seeds.
