Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 4 pieces flatbread or naan
- 1 cup fresh mozzarella cheese, sliced
- 1 cup cherry tomatoes, halved
- ¼ cup fresh basil leaves, roughly chopped
- Balsamic glaze for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the chicken breasts with olive oil, and season with salt, pepper, and Italian seasoning.
- In a skillet over medium heat, cook the chicken for about 5-7 minutes on each side, until cooked through.
- Remove from heat and let it rest for a few minutes.
- Prepare your flatbreads on a baking sheet.
- Slice the cooked chicken thinly and distribute over the flatbreads.
- Layer fresh mozzarella cheese and halved cherry tomatoes on top.
- Bake in the oven for 10-12 minutes, or until cheese is melted and bubbly.
- Let cool for a minute, then top with fresh basil and drizzle with balsamic glaze before serving.
