Description

A delightful and straightforward dish that combines the classic flavors of a Caprese salad in an easy-to-eat flatbread format.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 pieces flatbread or naan
  • 1 cup fresh mozzarella cheese, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh basil leaves, roughly chopped
  • Balsamic glaze for drizzling


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the chicken breasts with olive oil, and season with salt, pepper, and Italian seasoning.
  3. In a skillet over medium heat, cook the chicken for about 5-7 minutes on each side, until cooked through.
  4. Remove from heat and let it rest for a few minutes.
  5. Prepare your flatbreads on a baking sheet.
  6. Slice the cooked chicken thinly and distribute over the flatbreads.
  7. Layer fresh mozzarella cheese and halved cherry tomatoes on top.
  8. Bake in the oven for 10-12 minutes, or until cheese is melted and bubbly.
  9. Let cool for a minute, then top with fresh basil and drizzle with balsamic glaze before serving.
