Ingredients
- 1 pound boneless, skinless chicken breasts
- 4 slices smoked turkey bacon
- 2 cups mixed vegetables (e.g., bell peppers, broccoli, zucchini), chopped
- 1/2 cup ranch dressing (keto-friendly)
- Salt and pepper to taste
- Olive oil for cooking (about 1 tablespoon)
Instructions
- Cook the smoked turkey bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
- In the same skillet, add olive oil and cook the chicken breasts until fully cooked, about 6–7 minutes per side. Season with salt and pepper.
- Remove chicken from the skillet and let it rest for 5 minutes before slicing.
- Add the mixed vegetables to the skillet and sauté in the remaining bacon drippings until tender-crisp, about 5–7 minutes. Season to taste.
- Assemble the bowls by placing sliced chicken on sautéed vegetables, crumbling turkey bacon on top, and drizzling with ranch dressing.
