Description
A classic one-pot chicken and yellow rice recipe that’s easy, flavorful, and perfect for meal prep or family dinners.
Ingredients
4–6 bone-in chicken thighs or drumsticks
1 cup long grain white rice
2 cups chicken broth
1 small onion, diced
1/2 cup chopped bell pepper
2–3 garlic cloves, minced
1–2 tsp turmeric or 1 packet sazón
1 tsp paprika
Salt and pepper to taste
Olive oil for sautéing
Instructions
1. Season chicken with salt, pepper, and paprika.
2. In a large pot, heat oil and sear chicken until golden brown.
3. Remove chicken and sauté onions, bell peppers, and garlic until soft.
4. Add rice, turmeric/sazón, and toast for 1 minute.
5. Pour in chicken broth and bring to a simmer.
6. Return chicken to the pot, skin side up. Cover and cook on low for 25–30 mins.
7. Let rest 5 minutes before fluffing and serving.
Notes
Use boneless chicken for faster cooking.
Add frozen peas or olives for Spanish-style.
Store leftovers up to 4 days, or freeze for 2 months.
