Ingredients

  • 2 pounds baby potatoes, halved
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved potatoes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
  3. Spread the potatoes on a baking sheet in a single layer.
  4. Bake for 25-30 minutes, or until the potatoes are golden and tender.
