Ingredients
- 2 pounds baby potatoes, halved
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 packet ranch seasoning mix
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved potatoes with olive oil, ranch seasoning, salt, and pepper until evenly coated.
- Spread the potatoes on a baking sheet in a single layer.
- Bake for 25-30 minutes, or until the potatoes are golden and tender.
- Remove from the oven, sprinkle with shredded cheese, and return to the oven until the cheese is melted, about 5 minutes.
- Garnish with chopped parsley if desired and serve warm.
