Delightful comfort meal packed with crispy tater tots, flavorful ground beef, and gooey cheese wrapped in soft tortillas.
Ingredients
- 1 pound ground beef (or ground turkey or plant-based alternative)
- 2 cups frozen tater tots
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup Taco Bell chipotle sauce
- 6 large flour tortilla wraps
- Salt and pepper to taste
- Optional toppings: diced tomatoes, chopped green onions, cilantro
Instructions
- Preheat the oven and cook the tater tots according to package instructions until golden and crispy.
- In a skillet over medium heat, brown the ground beef, seasoning with salt and pepper. Drain any excess grease.
- In a large mixing bowl, combine the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and Monterey Jack cheese. Mix until well combined.
- Warm the tortillas in a dry skillet or microwave for about 10-15 seconds until pliable.
- Spoon a generous portion of the filling onto each tortilla, drizzle with chipotle sauce, and add sour cream.
- Fold the sides of the tortilla over the filling and roll tightly to form a burrito.
- Place the burritos in a baking dish, sprinkle with additional cheese, and bake until melted and bubbly.
- Garnish with diced tomatoes, green onions, and cilantro if desired. Serve hot with extra sour cream and chipotle sauce.
Notes
Adjust seasonings based on taste; pan-fry burritos after baking for extra crispiness. Consider vegetarian options with black beans or lentils.
