Description

Delightful comfort meal packed with crispy tater tots, flavorful ground beef, and gooey cheese wrapped in soft tortillas.

Ingredients

  • 1 pound ground beef (or ground turkey or plant-based alternative)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup Taco Bell chipotle sauce
  • 6 large flour tortilla wraps
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, chopped green onions, cilantro

Instructions

  1. Preheat the oven and cook the tater tots according to package instructions until golden and crispy.
  2. In a skillet over medium heat, brown the ground beef, seasoning with salt and pepper. Drain any excess grease.
  3. In a large mixing bowl, combine the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and Monterey Jack cheese. Mix until well combined.
  4. Warm the tortillas in a dry skillet or microwave for about 10-15 seconds until pliable.
  5. Spoon a generous portion of the filling onto each tortilla, drizzle with chipotle sauce, and add sour cream.
  6. Fold the sides of the tortilla over the filling and roll tightly to form a burrito.
  7. Place the burritos in a baking dish, sprinkle with additional cheese, and bake until melted and bubbly.
  8. Garnish with diced tomatoes, green onions, and cilantro if desired. Serve hot with extra sour cream and chipotle sauce.

Notes

Adjust seasonings based on taste; pan-fry burritos after baking for extra crispiness. Consider vegetarian options with black beans or lentils.
