Description

Nutritious and tasty breakfast egg bites packed with protein, perfect for meal prep and busy mornings.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • Cooking spray or oil for greasing muffin tin


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs, cottage cheese, shredded cheese, diced bell pepper, and diced onion. Season with salt and pepper.
  3. Grease a muffin tin with cooking spray or oil.
  4. Pour the egg mixture evenly into the muffin cups, filling each one about 3/4 full.
  5. Bake for 15-20 minutes, or until the egg bites are firm and lightly golden on top.
  6. Let them cool slightly before removing from the muffin tin. Enjoy warm, or refrigerate for meal prep!
