Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- Salt and pepper to taste
- Cooking spray or oil for greasing muffin tin
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the eggs, cottage cheese, shredded cheese, diced bell pepper, and diced onion. Season with salt and pepper.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture evenly into the muffin cups, filling each one about 3/4 full.
- Bake for 15-20 minutes, or until the egg bites are firm and lightly golden on top.
- Let them cool slightly before removing from the muffin tin. Enjoy warm, or refrigerate for meal prep!
Notes
Use room temperature ingredients for a smoother mixture. Experiment with herbs and different cheeses for added flavor. Store leftovers in an airtight container in the refrigerator.
