Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 0.5 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tablespoon taco seasoning
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can diced tomatoes with green chilies (10 oz, drained)
- 4 oz cream cheese (cubed and softened)
- 0.5 cup sour cream
- 1.5 cups shredded cheddar cheese
- 0.5 cup shredded Monterey Jack cheese
- Chopped green onions or cilantro (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease an 8×8 or 9×9-inch baking dish.
- In a large skillet over medium heat, warm the olive oil. Add the ground beef and cook until browned, breaking it into small pieces.
- Add the finely chopped onion and minced garlic, and sauté for 2-3 minutes until the onion is soft.
- Stir in the taco seasoning, salt, and black pepper, mixing thoroughly.
- Lower the heat and add the drained diced tomatoes, softened cream cheese, and sour cream to the skillet. Stir until the cream cheese melts.
- Spoon the beef and cheese mixture into the prepared baking dish, spreading it evenly.
- Sprinkle the shredded cheddar and Monterey Jack cheeses over the top.
- Bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.
- Let cool for a few minutes before serving and garnish with green onions or cilantro.
Notes
For a healthier option, use lean ground beef. Adjust spice levels to your taste and consider cheese alternatives.
