Description

A scrumptious and hearty low-carb taco-inspired bake filled with seasoned beef, creamy cheese, and burst of flavors without the tortillas.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 0.5 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon taco seasoning
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 can diced tomatoes with green chilies (10 oz, drained)
  • 4 oz cream cheese (cubed and softened)
  • 0.5 cup sour cream
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • Chopped green onions or cilantro (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 or 9×9-inch baking dish.
  2. In a large skillet over medium heat, warm the olive oil. Add the ground beef and cook until browned, breaking it into small pieces.
  3. Add the finely chopped onion and minced garlic, and sauté for 2-3 minutes until the onion is soft.
  4. Stir in the taco seasoning, salt, and black pepper, mixing thoroughly.
  5. Lower the heat and add the drained diced tomatoes, softened cream cheese, and sour cream to the skillet. Stir until the cream cheese melts.
  6. Spoon the beef and cheese mixture into the prepared baking dish, spreading it evenly.
  7. Sprinkle the shredded cheddar and Monterey Jack cheeses over the top.
  8. Bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.
  9. Let cool for a few minutes before serving and garnish with green onions or cilantro.
