Description

A comforting and easy-to-make spaghetti dish featuring a creamy garlic and cheese sauce.


Ingredients

  • 8 oz spaghetti
  • 4 cloves fresh garlic, minced
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Drain, reserving about ½ cup of pasta water.
  2. In a large skillet, heat unsalted butter and olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes, or until fragrant and golden brown.
  3. Lower the heat, then add Parmesan cheese and mozzarella cheese to the skillet. Stir until the cheeses melt into a creamy sauce. Gradually add reserved pasta water to adjust the sauce’s consistency.
  4. Add the cooked spaghetti to the skillet, tossing to coat the pasta in the sauce. Season with salt and pepper to taste.
  5. Plate the pasta and garnish with fresh parsley and extra Parmesan cheese.

Notes

Use freshly minced garlic for the best flavor. Adjust the cheese according to your preference. You can add red pepper flakes for heat or additional vegetables for nutrition.
