Ingredients

Instructions
- In a large pot, heat olive oil over medium heat. Add onions and ginger, and sauté until softened.
- Add the chopped carrots and vegetable broth, bringing to a boil.
- Reduce heat and simmer until carrots are tender, about 20 minutes.
- Use an immersion blender or transfer to a blender to puree the soup until smooth.
- Return to heat, season with salt, pepper, and lemon juice if using.
