Description

A refreshing and vibrant dish combining the sweetness of apples and the crunchiness of carrots, perfect for any occasion.


Ingredients

  • 1 red delicious apple
  • 1 granny smith apple
  • 2 tablespoons lemon juice
  • 2 cups matchstick carrots
  • 1/4 cup yellow onion, finely diced
  • 1/3 cup dried sweetened cranberries
  • 1/2 cup vanilla yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup canned mandarin segments, drained


Instructions

  1. Cut both apples into matchstick pieces and place them in a bowl.
  2. Pour the lemon juice over the apple pieces in the bowl and toss well.
  3. Set the bowl aside to let the apples soak for 5 minutes.
  4. Pour the matchstick carrots into a large mixing bowl.
  5. Add the diced onion and sweetened cranberries to the bowl.
  6. Once the apples have sat for 5 minutes, add them to the mixing bowl.
  7. Add the vanilla yogurt and mayonnaise to the bowl.
  8. Add the sugar, salt, and pepper to the bowl.
  9. Stir all ingredients together well.
  10. Add the mandarin segments to the bowl and gently mix them into the salad.
  11. Cover the bowl and refrigerate for at least 180 minutes.
  12. Serve and enjoy!

Notes

For best texture, choose fresh, crispy apples. Add mandarin segments right before serving to maintain their softness.
