Ingredients
- 1 pound smoked sausage
- 1 cup rice (long grain or Jasmine)
- 2 bell peppers (any color, diced)
- 2 tablespoons Cajun seasoning
- 1 onion (diced)
- 3 cloves garlic (minced)
- 3 cups chicken broth
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add sliced smoked sausage and cook until browned, about 5-7 minutes.
- Add diced onion, minced garlic, and bell peppers to the skillet. Sauté until softened, approximately 3-5 minutes.
- Stir in the rice, Cajun seasoning, and chicken broth. Mix well to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover the skillet and allow to cook until the rice is tender and has absorbed the liquid, about 20 minutes.
