Description

A vibrant and flavorful one-pan meal featuring smoked sausage, rice, and colorful bell peppers, perfect for busy weeknights or family gatherings.

Ingredients

  • 1 pound smoked sausage
  • 1 cup rice (long grain or Jasmine)
  • 2 bell peppers (any color, diced)
  • 2 tablespoons Cajun seasoning
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 3 cups chicken broth
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add sliced smoked sausage and cook until browned, about 5-7 minutes.
  3. Add diced onion, minced garlic, and bell peppers to the skillet. Sauté until softened, approximately 3-5 minutes.
  4. Stir in the rice, Cajun seasoning, and chicken broth. Mix well to combine.
  5. Bring the mixture to a boil, then reduce heat to low. Cover the skillet and allow to cook until the rice is tender and has absorbed the liquid, about 20 minutes.
  6. Serve hot, and enjoy the flavorful goodness!

Notes

For added flavor, consider using Andouille sausage or adding fresh herbs like parsley or green onions before serving.
