  • 1 lb chicken breast, diced
  • 1 cup pasta (such as rotini or penne)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil
  • Chopped parsley for garnish


Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic, and sauté until the vegetables are soft and fragrant.
  2. Add the diced chicken to the pot and cook until browned on all sides, ensuring that it’s cooked through.
  3. Stir in the Cajun seasoning, along with salt and pepper to taste, mixing everything well for an even distribution of flavor.
  4. Pour in the chicken broth and bring the mixture to a boil, allowing the flavors to meld beautifully.
  5. Once boiling, add the pasta to the pot and cook according to the package instructions, usually about 8-10 minutes, until al dente.
  6. Reduce the heat to low and carefully stir in the heavy cream until it’s thoroughly combined and the soup becomes creamy.

Notes

Don’t overcook the pasta, use fresh ingredients, and adjust the spice level to taste. Using leftover rotisserie chicken saves time.
