Description
A delightful dish that combines Cajun flavors with a creamy soup and pasta, perfect for chilly evenings.
Ingredients
- 1 lb chicken breast, diced
- 1 cup pasta (such as rotini or penne)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- Olive oil
- Chopped parsley for garnish
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic, and sauté until the vegetables are soft and fragrant.
- Add the diced chicken to the pot and cook until browned on all sides, ensuring that it’s cooked through.
- Stir in the Cajun seasoning, along with salt and pepper to taste, mixing everything well for an even distribution of flavor.
- Pour in the chicken broth and bring the mixture to a boil, allowing the flavors to meld beautifully.
- Once boiling, add the pasta to the pot and cook according to the package instructions, usually about 8-10 minutes, until al dente.
- Reduce the heat to low and carefully stir in the heavy cream until it’s thoroughly combined and the soup becomes creamy.
- Serve hot, garnished with chopped parsley for a fresh touch.
Notes
Don’t overcook the pasta, use fresh ingredients, and adjust the spice level to taste. Using leftover rotisserie chicken saves time.
