Ingredients
- 1 head of cabbage, chopped
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the garlic and cook for an additional minute.
- Add chopped cabbage, broth, diced tomatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 25-30 minutes until cabbage is tender.
- Adjust seasoning as needed and serve warm.
Notes
For a creamier texture, consider blending a portion of the soup before serving. This soup can be frozen for up to 3 months.
