Description

Ingredients

  • 1 head of cabbage, chopped
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the garlic and cook for an additional minute.
  4. Add chopped cabbage, broth, diced tomatoes, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 25-30 minutes until cabbage is tender.
  6. Adjust seasoning as needed and serve warm.

Notes

For a creamier texture, consider blending a portion of the soup before serving. This soup can be frozen for up to 3 months.
