Ingredients

  • 12 ounces smoked sausage, sliced
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1 pound cabbage, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 quart chicken stock
  • 21 ounces diced Rotel tomatoes (with green chilies)
  • 30 ounces black-eyed peas, drained and rinsed


Instructions

  1. Add all ingredients except the black-eyed peas to a slow cooker.
  2. Cook on low for 5 1/2 hours.
  3. Add the black-eyed peas and continue to cook for an additional 30 minutes.
