Description

A delightful dish combining the sweetness of roasted butternut squash with tender ravioli, perfect for any occasion.


Ingredients

  • 1 package of fresh or frozen ravioli
  • 2 cups of butternut squash, peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup grated parmesan cheese
  • Fresh sage leaves for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, pepper, and nutmeg. Spread on a baking sheet and roast for about 25 minutes or until tender.
  3. Cook the ravioli according to package instructions.
  4. Once the butternut squash is done, mash it lightly and combine with the cooked ravioli.
  5. Serve with grated parmesan and garnish with fresh sage leaves.

Notes

Serve warm topped with grated parmesan and fresh sage. Drizzle with extra olive oil or melted butter for added richness. Pair with a salad or garlic bread.
