Description
A warm, caramel-kissed summer dessert that pairs nutty browned butter with juicy peaches.
Ingredients
- 1/2 cup (1 stick) + 2 tbsp unsalted butter
- 1 1/2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 cup brown sugar, divided
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp salt
- 1/2 cup whole milk
- 1/2 cup Greek yogurt or sour cream
- 2 large eggs
- 3 peaches, thinly sliced
- 1 cup heavy cream
- 3 tbsp honey
Instructions
- Preheat the oven to 350°F. Spray a 9” round cake pan with cooking spray and set aside.
- Combine 1/2 cup of the brown sugar with 2 tbsp of butter in a small saucepan and cook over medium heat until smooth. Pour into the prepared pan and tilt to cover the bottom; arrange peach slices on top.
- Melt the remaining 1/2 cup of butter in a saucepan over medium heat, swirling it until it begins to foam and brown.
- Whisk together the flour, granulated sugar, remaining brown sugar, baking powder, baking soda, and salt in a medium bowl.
- Mix the eggs, yogurt, milk, and vanilla in a large measuring cup, then add to the flour mixture and whisk until just combined.
- Pour the melted butter into the batter and whisk until emulsified, taking care not to overmix.
- Spread batter over peach slices and smooth with a spatula. Bake for 35-40 minutes until golden brown and set.
- Cool in the pan for 10 minutes, then flip onto a plate to serve warm.
- Whip the cream with honey until soft peaks form for serving.
Notes
Serve warm with whipped cream or vanilla ice cream for a delightful dessert. Use ripe, but firm peaches for best results.
