Description

Bite-sized pancake poppers that are easy to make and perfect for busy mornings. Customize them to suit your taste!


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
  2. In a medium bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, mixing gently until just combined.
  5. Scoop the batter into the prepared muffin pan, filling each cup about 2/3 full.
  6. Bake for 10-12 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. Let them cool slightly in the pan, then serve warm with your favorite syrup.

Notes

Don’t overmix the batter to avoid tough poppers. Experiment with flavors by adding chocolate chips, fruits, or cheese.
