Ingredients
1 half chicken (bone-in, skin-on)
3 cloves garlic, minced
1 tbsp paprika
2 tbsp lime juice
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tbsp chopped fresh parsley or cilantro
Instructions
1. Clean and pat dry the chicken thoroughly.
2. In a small bowl, mix garlic, paprika, lime juice, olive oil, salt, pepper, and herbs.
3. Rub the marinade over the chicken and let it marinate for 2 to 24 hours.
4. Preheat oven to 375°F (190°C). Place chicken on a baking sheet.
5. Roast for 45–60 minutes, basting every 15 minutes with pan juices or reserved marinade.
6. Check for doneness at 165°F (74°C) internal temperature.
7. Let rest 10 minutes before serving. Enjoy with traditional Brazilian sides.
Notes
For extra crispy skin, finish under the broiler for 3–5 minutes.
