Ingredients
2.5 lbs boneless beef short ribs
1 tablespoon kosher salt
1 teaspoon black pepper
1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 tablespoon tomato paste
1 cup red wine (optional)
2 cups beef broth
2 sprigs fresh thyme
2 bay leaves
Instructions
1. Trim excess fat and silver skin from the ribs.
2. Season ribs with salt and pepper.
3. Heat oil in a Dutch oven. Sear ribs on all sides.
4. Remove ribs. Sauté onion, carrot, and celery until soft.
5. Add garlic and tomato paste. Cook 1 min.
6. Deglaze with red wine. Simmer briefly.
7. Return ribs to pot. Add broth, thyme, and bay leaves.
8. Cover and braise in oven at 300°F for 2.5–3 hours.
9. Serve with mashed potatoes or vegetables.
Notes
Optional: Add mushrooms, balsamic vinegar, or soy sauce for flavor depth.
For slow cooker: Cook on low for 7–8 hours.
For Instant Pot: Pressure cook on high for 45–60 minutes.
Leftovers can be used in pasta, tacos, or sandwiches.
