A delightful breakfast casserole combining sweet blueberries and tangy lemon, perfect for busy mornings.
Ingredients
- 1 (8 oz) cream cheese
- 1 cup powdered sugar
- 2 tbsp milk
- 1 tbsp vanilla extract
- 2 cups blueberries (fresh or frozen)
- 2 loaves French bread, cubed
- 2 cups milk
- 8 large eggs
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 lemon (zest + 2 tbsp juice)
Instructions
- Mix cream cheese, powdered sugar, 2 tablespoons of milk, and 1 tablespoon of vanilla extract until smooth.
- Fold in 1 cup of blueberries, 1 tablespoon of lemon juice, and some lemon zest to create the filling.
- Layer half of the cubed French bread in a greased 10×14 inch baking dish.
- Spread the cream cheese mixture over the bread, followed by the remaining cubes of bread.
- Whisk together the 2 cups of milk, eggs, 2 teaspoons of vanilla, cinnamon, nutmeg, and additional lemon zest and juice until combined.
- Pour the egg mixture over the layered bread and sprinkle leftover blueberries on top.
- Cover with foil and refrigerate overnight.
- Preheat oven to 375°F. Bake covered for 45 minutes, then uncover and bake for an additional 30 minutes until golden and set.
Notes
For best results, use stale French bread and allow the casserole to rest overnight to enhance flavor.
