Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup unsalted butter, softened
- 1 package (8 oz) cream cheese, softened
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and grease/flour a loaf pan.
- In a large bowl, mix the flour, sugar, salt, and baking powder.
- In another bowl, beat the cream cheese and butter until smooth.
- Add the eggs, milk, and vanilla extract, and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the blueberries gently.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55-60 minutes or until a toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use fresh blueberries and mix the batter just until combined.
