A nutritious and delicious breakfast combining the creaminess of cottage cheese with fresh blueberries.


Ingredients

  • 2 cups full-fat cottage cheese
  • 4 eggs
  • 4 tbsp sweetener of choice
  • 2 tsp vanilla extract
  • 2 tbsp cornstarch
  • 1 tsp lemon zest
  • 1½ cups blueberries, divided


Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 dish well.
  2. Strain the cottage cheese for 2–3 minutes to remove excess liquid; set aside.
  3. In a blender, combine the cottage cheese, eggs, sweetener, vanilla, and cornstarch. Blend until smooth.
  4. Check the texture; if it’s grainy, blend for another 15 seconds. If too thick, add 1 tsp of milk.
  5. Gently fold in the blueberries and lemon zest.
  6. Pour the mixture into the greased dish and spread it evenly.
  7. Bake for 35–40 minutes, until the edges are set and a toothpick comes out mostly clean.
  8. Allow it to cool for 10–15 minutes before slicing. Top with extra blueberries if desired.

Notes

Use fresh blueberries for best flavor, and strain the cottage cheese for a smoother texture. Adjust sweetness based on preference.
