A nutritious and delicious breakfast combining the creaminess of cottage cheese with fresh blueberries.
Ingredients
- 2 cups full-fat cottage cheese
- 4 eggs
- 4 tbsp sweetener of choice
- 2 tsp vanilla extract
- 2 tbsp cornstarch
- 1 tsp lemon zest
- 1½ cups blueberries, divided
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 dish well.
- Strain the cottage cheese for 2–3 minutes to remove excess liquid; set aside.
- In a blender, combine the cottage cheese, eggs, sweetener, vanilla, and cornstarch. Blend until smooth.
- Check the texture; if it’s grainy, blend for another 15 seconds. If too thick, add 1 tsp of milk.
- Gently fold in the blueberries and lemon zest.
- Pour the mixture into the greased dish and spread it evenly.
- Bake for 35–40 minutes, until the edges are set and a toothpick comes out mostly clean.
- Allow it to cool for 10–15 minutes before slicing. Top with extra blueberries if desired.
Notes
Use fresh blueberries for best flavor, and strain the cottage cheese for a smoother texture. Adjust sweetness based on preference.
