Ingredients
- 1 cup black-eyed peas
- 4 slices of bacon
- 1 pound sausage (your choice: pork, turkey, or substitute)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth (or vegetable broth)
- Black pepper, to taste
- Salt, to taste
- 2 tablespoons olive oil
- Optional: 2 bay leaves
Instructions
- Rinse and soak the black-eyed peas overnight.
- In a large pot, heat olive oil over medium heat.
- Add the chopped bacon and cook until crispy, then add the sausage and cook until browned.
- Add the chopped onion and minced garlic, cooking until soft.
- Drain and add the soaked black-eyed peas to the pot, then pour in the chicken broth.
- Season with black pepper and salt, and add the optional bay leaves.
- Bring the mixture to a boil, then reduce heat and simmer for 45 minutes to an hour, or until the peas are tender.
- Serve hot.
