Description

Ingredients

  • 1 cup black-eyed peas
  • 4 slices of bacon
  • 1 pound sausage (your choice: pork, turkey, or substitute)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth)
  • Black pepper, to taste
  • Salt, to taste
  • 2 tablespoons olive oil
  • Optional: 2 bay leaves


Instructions

  1. Rinse and soak the black-eyed peas overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the chopped bacon and cook until crispy, then add the sausage and cook until browned.
  4. Add the chopped onion and minced garlic, cooking until soft.
  5. Drain and add the soaked black-eyed peas to the pot, then pour in the chicken broth.
  6. Season with black pepper and salt, and add the optional bay leaves.
  7. Bring the mixture to a boil, then reduce heat and simmer for 45 minutes to an hour, or until the peas are tender.
  8. Serve hot.
