Description

Ingredients

  • 1 cup black-eyed peas, soaked overnight
  • 1 lb smoked sausage, sliced
  • 1 bunch collard greens, washed and chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, and sauté until softened.
  2. Stir in the sliced smoked sausage and cook until browned.
  3. Add the soaked black-eyed peas and chicken broth; bring to a boil.
  4. Reduce heat and simmer for about 30 minutes until peas are tender.
  5. Add the chopped collard greens, stir, and cook for an additional 10-15 minutes.
  6. Season with salt and pepper to taste, serve warm, and enjoy!

Notes

For added flavor, consider adding spices like thyme or smoked paprika. Can be made vegetarian by using plant-based sausage.
