A comforting Southern dish filled with black-eyed peas, smoked sausage, and collard greens, perfect for any season.
Ingredients
- 1 cup black-eyed peas, soaked overnight
- 1 lb smoked sausage, sliced
- 1 bunch collard greens, washed and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, and sauté until softened.
- Stir in the sliced smoked sausage and cook until browned.
- Add the soaked black-eyed peas and chicken broth; bring to a boil.
- Reduce heat and simmer for about 30 minutes until peas are tender.
- Add the chopped collard greens, stir, and cook for an additional 10-15 minutes.
- Season with salt and pepper to taste, serve warm, and enjoy!
Notes
For added flavor, consider adding spices like thyme or smoked paprika. Can be made vegetarian by using plant-based sausage.
