Ingredients
- 1 cup black beans, canned or cooked
- 1 cup rice
- 1 sausage, sliced (any type of your choice)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Stir in the sausage and cook until browned.
- Add the cumin, smoked paprika, salt, and pepper; mix well.
- Pour in the rice, black beans, and broth; bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked.
- Fluff with a fork and serve hot.
Notes
Feel free to customize with different types of sausage or add extra vegetables. Leftovers can be stored for 3-4 days in the refrigerator or frozen for up to three months.
