Description

Ingredients

  • 1 cup black beans, canned or cooked
  • 1 cup rice
  • 1 sausage, sliced (any type of your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Olive oil for cooking


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the sausage and cook until browned.
  4. Add the cumin, smoked paprika, salt, and pepper; mix well.
  5. Pour in the rice, black beans, and broth; bring to a boil.
  6. Reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked.
  7. Fluff with a fork and serve hot.

Notes
