Ingredients

  • 2 large bitter melons (bitter gourds)
  • 2 tomatoes, sliced
  • 2 onions, sliced
  • 1/4 cup drinking water
  • 1/2 cup vinegar
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp sugar
  • Anchovies (Dilis) for topping
  • Oil for frying


Instructions

  1. Slice the tomatoes and onions into thin pieces.
  2. Heat oil in a skillet and fry the anchovies until crispy, then set them aside.
  3. Cut the bitter melons in half, remove the seeds, and slice them thinly. Squeeze the slices in a bowl to release some juices, rinse with water to reduce bitterness, then strain.
  4. In a large mixing bowl, combine the bitter melon, sliced tomatoes, and onions.
  5. In a separate bowl, mix together the drinking water, vinegar, pepper, salt, and sugar. Pour this sauce over the vegetable mixture and toss gently.
  6. Serve the salad in a bowl and top with crispy anchovies if desired.
  7. Store leftovers in the fridge for future enjoyment.

Notes

Adjust the bitterness of the melon with salt water or allow the salad to sit for better flavor melding. Use high-quality vinegar for enhanced taste.
