Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper and sear until golden brown on both sides, about 5-7 minutes per side. Remove the chicken and set aside.
- In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Add Italian seasoning and sun-dried tomatoes, mixing well.
- Return the chicken to the skillet and let it simmer for about 10-15 minutes, until the chicken is cooked through and tender.
- Stir in the spinach until wilted, for a nutritious addition to your dish.
- Serve the creamy chicken topped with grated Parmesan cheese.
Notes
For a lighter version, use half-and-half instead of heavy cream. Additionally, chicken thighs can be used for extra flavor.
