Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • Salt and pepper to taste
  • Parmesan cheese for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper and sear until golden brown on both sides, about 5-7 minutes per side. Remove the chicken and set aside.
  2. In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the chicken broth and heavy cream, stirring to combine. Add Italian seasoning and sun-dried tomatoes, mixing well.
  4. Return the chicken to the skillet and let it simmer for about 10-15 minutes, until the chicken is cooked through and tender.
  5. Stir in the spinach until wilted, for a nutritious addition to your dish.
  6. Serve the creamy chicken topped with grated Parmesan cheese.

Notes

For a lighter version, use half-and-half instead of heavy cream. Additionally, chicken thighs can be used for extra flavor.
