A delightful twist on traditional lasagna, this One-Pot Lasagna Soup combines rich flavors in a warm, comforting soup that’s easy to prepare.
Ingredients
- 1 pound ground beef or turkey
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef or chicken broth
- 2 teaspoons Italian seasoning
- 1 teaspoon red pepper flakes (optional)
- 8 ounces uncooked pasta (fusilli, rotini, or your choice)
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot over medium heat, cook the ground beef (or turkey) until browned. Drain any excess fat if needed.
- Add the diced onion to the pot and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute, or until fragrant.
- Pour in the crushed tomatoes and broth. Add the Italian seasoning, red pepper flakes (if using), and season with salt and pepper. Bring the mixture to a boil.
- Once boiling, add the uncooked pasta. Reduce the heat to a simmer and cook for about 10 minutes, or until the pasta is al dente.
- Stir in the fresh spinach and let it wilt for a minute.
- Remove the pot from the heat and swirl in the ricotta cheese.
- Serve warm, topped with mozzarella cheese and fresh basil leaves if desired.
Notes
For a vegetarian version, substitute the meat with lentils or mushrooms, and use vegetable broth.
