Description

A delightful twist on traditional lasagna, this One-Pot Lasagna Soup combines rich flavors in a warm, comforting soup that’s easy to prepare.


Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef or chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon red pepper flakes (optional)
  • 8 ounces uncooked pasta (fusilli, rotini, or your choice)
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)


Instructions

  1. In a large pot over medium heat, cook the ground beef (or turkey) until browned. Drain any excess fat if needed.
  2. Add the diced onion to the pot and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute, or until fragrant.
  3. Pour in the crushed tomatoes and broth. Add the Italian seasoning, red pepper flakes (if using), and season with salt and pepper. Bring the mixture to a boil.
  4. Once boiling, add the uncooked pasta. Reduce the heat to a simmer and cook for about 10 minutes, or until the pasta is al dente.
  5. Stir in the fresh spinach and let it wilt for a minute.
  6. Remove the pot from the heat and swirl in the ricotta cheese.
  7. Serve warm, topped with mozzarella cheese and fresh basil leaves if desired.

Notes

For a vegetarian version, substitute the meat with lentils or mushrooms, and use vegetable broth.
