Ingredients
- 1 package hashbrowns (frozen or fresh)
- 2 cups shredded cheese (cheddar or your choice)
- 6 large eggs
- 1 pound cooked sausage (or a substitute)
- Salt, to taste
- Pepper, to taste
- ½ onion, chopped (optional)
- ½ bell pepper, chopped (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the hashbrowns, cooked sausage, beaten eggs, salt, pepper, and cheese.
- If using, add chopped onion and bell pepper; mix well.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Bake for 45-50 minutes or until the top is golden and the eggs are fully set.
- Let cool for a few minutes before serving.
Notes
For a healthier option, use lean turkey sausage and load with vegetables. Customize with different cheeses and spices for variety.
