Ingredients

  • 1 package hashbrowns (frozen or fresh)
  • 2 cups shredded cheese (cheddar or your choice)
  • 6 large eggs
  • 1 pound cooked sausage (or a substitute)
  • Salt, to taste
  • Pepper, to taste
  • ½ onion, chopped (optional)
  • ½ bell pepper, chopped (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the hashbrowns, cooked sausage, beaten eggs, salt, pepper, and cheese.
  3. If using, add chopped onion and bell pepper; mix well.
  4. Transfer the mixture to a greased casserole dish and spread evenly.
