Description

A savory and comforting beef goulash that is full of rich flavors and features tender chunks of beef simmered in a delicious broth with colorful vegetables.

Ingredients

  • 1.5 lbs beef, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 2 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • Rice or bread for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef chunks and brown them on all sides until nicely seared.
  2. Remove the beef from the pot and set it aside. In the same pot, add the onion, garlic, carrots, and bell pepper. Sauté until the vegetables are soft and fragrant.
  3. Return the browned beef to the pot. Then, add the diced tomatoes, beef broth, paprika, cumin, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 90 to 120 minutes, or until the beef is tender and infused with flavors.
  5. Serve hot over rice or alongside bread to soak up the delicious sauce.

Notes

Let it simmer longer for better flavor. Adjust seasonings to personal taste.
