Description
A warm and hearty Beef & Cabbage Stew perfect for chilly days, combining tender beef and fresh vegetables in a flavorful broth.
Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 medium head of cabbage, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the beef and brown on all sides. Remove the beef and set aside.
- In the same pot, add onion and garlic, and sauté until the onion is translucent.
- Stir in the tomato paste, Worcestershire sauce, thyme, and paprika.
- Return the beef to the pot, along with the beef broth, cabbage, carrots, and potatoes.
- Bring to a boil, then reduce heat, cover, and simmer for 90 to 120 minutes, or until the beef is tender.
- Season with salt and pepper to taste before serving.
Notes
Make sure to brown the beef well for more flavor. You can add other vegetables for variety and adjust the seasoning to your taste.
