Homemade beef breakfast sausage with rich flavor, customizable seasoning, and healthy variations for every diet.
Ingredients
1 lb 80/20 ground beef (grass-fed if preferred)
1 tbsp ground sage
1 tsp dried thyme
1 tsp black pepper
1 tsp smoked paprika
1 tbsp brown sugar (optional, or cinnamon for sugar-free)
2 tsp kosher salt
Optional: red pepper flakes, minced vegetables
Instructions
1. Chill mixing bowl and utensils.
2. Place ground beef in chilled bowl.
3. Sprinkle seasonings evenly over beef.
4. Mix gently with hands until just combined.
5. Form into patties or stuff into casings.
6. Cook over medium heat 4–5 minutes per side until internal temp is 160°F (71°C).
7. Serve immediately or store/freeze for later.
Notes
For low-sodium sausage, reduce salt to 1 tsp and add more herbs.
For veggie boost, add finely chopped spinach, mushrooms, or peppers.
Freeze patties individually wrapped for up to 3 months.
