Ingredients
- Vegetable oil, as needed for oiling wire rack
- 2 pounds chicken wings, wingettes and drummettes
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1 teaspoon black pepper, coarsely ground
- 3/4 cup barbecue sauce
- 1 tablespoon chopped chives or green onions (optional)
Instructions
- Prepare the oven and baking sheet by adjusting the rack to the middle position and heating the oven to 450°F (232°C).
- Line a large baking sheet with foil for easy cleanup and grease a wire rack with vegetable oil.
- Dry the chicken wings with paper towels to remove excess moisture.
- Mix together the baking powder, kosher salt, and black pepper in a large bowl.
- Coat the chicken wings in the mixture until evenly coated.
- Arrange the coated wings on the wire rack for even cooking.
- Bake the wings for 20 minutes, then flip and continue baking for 10-15 minutes until golden brown and crispy.
- Toss the wings with barbecue sauce in a large bowl.
- Return the sauced wings to the baking sheet and bake for another 5 minutes to set the sauce.
- Serve hot, garnished with chives or green onions if desired.
