Description

Finger-licking BBQ chicken wings with a crispy exterior and saucy interior, perfect for any gathering.


Ingredients

  • Vegetable oil, as needed for oiling wire rack
  • 2 pounds chicken wings, wingettes and drummettes
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper, coarsely ground
  • 3/4 cup barbecue sauce
  • 1 tablespoon chopped chives or green onions (optional)


Instructions

  1. Prepare the oven and baking sheet by adjusting the rack to the middle position and heating the oven to 450°F (232°C).
  2. Line a large baking sheet with foil for easy cleanup and grease a wire rack with vegetable oil.
  3. Dry the chicken wings with paper towels to remove excess moisture.
  4. Mix together the baking powder, kosher salt, and black pepper in a large bowl.
  5. Coat the chicken wings in the mixture until evenly coated.
  6. Arrange the coated wings on the wire rack for even cooking.
  7. Bake the wings for 20 minutes, then flip and continue baking for 10-15 minutes until golden brown and crispy.
  8. Toss the wings with barbecue sauce in a large bowl.
  9. Return the sauced wings to the baking sheet and bake for another 5 minutes to set the sauce.
  10. Serve hot, garnished with chives or green onions if desired.
