Ingredients
- 1 1/2 pounds chicken thighs
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 1/2 cup BBQ sauce
- 3 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup plain Greek yogurt
- 2 tablespoons apple cider vinegar
- 1/4 cup cilantro, chopped
- 8 corn tortillas
- 1 cup shredded cheddar cheese
- 1 small-medium avocado, diced
- 1/4 cup diced red onion
- 1/4 cup cilantro, roughly chopped
- Optional: lime juice, sliced jalapeños
Instructions
- Start by preparing your spice mixture. In a small bowl, combine garlic powder, smoked paprika, chili powder, onion powder, cumin, salt, and pepper.
- Next, cook the chicken thighs. Season them with the spice mixture and heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 10 minutes. Flip the chicken and cook for an additional 5-10 minutes until it’s fully cooked. Remove from the pan, shred the chicken, and mix it with BBQ sauce in the pan until warmed through.
- While the chicken is cooking, prepare the coleslaw. In a bowl, mix the shredded cabbage, shredded carrots, Greek yogurt, apple cider vinegar, cilantro, salt, and pepper until everything is well combined.
- Warm the corn tortillas. You can do this over a gas stove or in a hot skillet for a few seconds on each side.
- Assemble the tacos. Fill each tortilla with coleslaw, shredded BBQ chicken, cheddar cheese, diced avocado, red onion, and cilantro.
- Serve your BBQ Chicken Tacos with additional toppings, like lime juice or sliced jalapeños, if desired.
