Description

BBQ Chicken Tacos are a delicious dish combining BBQ sauce, tender chicken, and crunchy slaw, perfect for gatherings and weeknight dinners.


Ingredients

  • 1 1/2 pounds chicken thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 1/2 cup BBQ sauce
  • 3 cups shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1/4 cup cilantro, chopped
  • 8 corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 small-medium avocado, diced
  • 1/4 cup diced red onion
  • 1/4 cup cilantro, roughly chopped
  • Optional: lime juice, sliced jalapeños


Instructions

  1. Start by preparing your spice mixture. In a small bowl, combine garlic powder, smoked paprika, chili powder, onion powder, cumin, salt, and pepper.
  2. Next, cook the chicken thighs. Season them with the spice mixture and heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 10 minutes. Flip the chicken and cook for an additional 5-10 minutes until it’s fully cooked. Remove from the pan, shred the chicken, and mix it with BBQ sauce in the pan until warmed through.
  3. While the chicken is cooking, prepare the coleslaw. In a bowl, mix the shredded cabbage, shredded carrots, Greek yogurt, apple cider vinegar, cilantro, salt, and pepper until everything is well combined.
  4. Warm the corn tortillas. You can do this over a gas stove or in a hot skillet for a few seconds on each side.
  5. Assemble the tacos. Fill each tortilla with coleslaw, shredded BBQ chicken, cheddar cheese, diced avocado, red onion, and cilantro.
  6. Serve your BBQ Chicken Tacos with additional toppings, like lime juice or sliced jalapeños, if desired.
