Description

A flavorful and easy-to-make Bang Bang Chicken Bowl featuring tender chicken, colorful veggies, and a creamy sauce, perfect for quick dinners and meal prep.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice


Instructions

  1. Cook rice according to package instructions and set aside.
  2. Cut chicken into bite-sized pieces and season with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Add chicken and sauté for 6-8 minutes until golden brown and cooked through.
  4. While chicken is cooking, mix sauce ingredients in a small bowl and adjust to taste.
  5. Once chicken is cooked, add mixed veggies and cook for an additional 2-3 minutes until just tender.
  6. Remove skillet from heat, pour sauce over chicken and veggies, and stir to coat.
  7. Serve hot over rice and garnish with extra sriracha or chopped green onions if desired.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop.
