A flavorful and easy-to-make Bang Bang Chicken Bowl featuring tender chicken, colorful veggies, and a creamy sauce, perfect for quick dinners and meal prep.
Ingredients
- 1 lb boneless, skinless chicken breast
- 1 cup cooked rice (white, brown, or cauliflower)
- 1 cup mixed veggies (broccoli, bell peppers, carrots)
- 2 tablespoons olive oil
- Salt and pepper to taste
- For the sauce:
- 1/2 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon lime juice
Instructions
- Cook rice according to package instructions and set aside.
- Cut chicken into bite-sized pieces and season with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and sauté for 6-8 minutes until golden brown and cooked through.
- While chicken is cooking, mix sauce ingredients in a small bowl and adjust to taste.
- Once chicken is cooked, add mixed veggies and cook for an additional 2-3 minutes until just tender.
- Remove skillet from heat, pour sauce over chicken and veggies, and stir to coat.
- Serve hot over rice and garnish with extra sriracha or chopped green onions if desired.
Notes
For leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop.
