A delightful dish combining savory chicken with comforting orzo pasta, complemented by a rich balsamic glaze.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil, divided
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- 3 cups fresh spinach
- 1/2 cup crumbled feta cheese
- Fresh parsley, chopped (optional)
Instructions
- In a small bowl, whisk together the balsamic vinegar, honey, minced garlic, salt, and pepper.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken breasts until golden brown and fully cooked, about 6–7 minutes on each side.
- Pour the balsamic mixture over the chicken and let it simmer until the sauce thickens. Remove the chicken and keep warm.
- In a separate saucepan, bring chicken broth to a boil, add the orzo, and cook as per package instructions (8–10 minutes).
- In the same skillet, add the remaining olive oil and sauté the spinach until wilted, about 2 minutes.
- After draining the orzo, stir in the sautéed spinach and season with salt and pepper.
- To serve, plate the orzo and spinach mixture, top with chicken, drizzle with balsamic glaze, and garnish with feta and parsley if desired.
Notes
Don’t overcook the chicken to retain moisture. Consider cooking the orzo in the same pan for less cleanup.
