Description

A comforting casserole that combines tender chicken, creamy potatoes, and vibrant broccoli, baked to golden perfection.


Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 3 cups potatoes, cubed and boiled until tender
  • 2 cups fresh or frozen broccoli florets
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1 1⁄2 cups shredded cheddar cheese
  • 1⁄2 cup mozzarella cheese
  • 1⁄2 tsp garlic powder
  • 1⁄2 tsp onion powder
  • Salt and pepper to taste
  • 1⁄2 cup breadcrumbs
  • 2 tbsp butter, melted


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine the sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper.
  3. Stir in the chicken, potatoes, broccoli, and 1 cup of cheddar cheese. Mix until everything is evenly coated.
  4. Transfer the mixture to the prepared baking dish and spread it out evenly.
  5. Sprinkle the remaining cheese on top. Combine the breadcrumbs with the melted butter and sprinkle the mixture over the cheese layer.
  6. Bake for 30–35 minutes or until the casserole is golden and bubbly.
  7. Let it cool slightly before serving.

Notes

Use leftover chicken or rotisserie chicken for quicker prep. For busy nights, boil and cube the potatoes ahead of time. Top with melted cheese and breadcrumbs for best flavor.
