Description

Delicious Baked Honey BBQ Chicken Bites, coated in a crunchy cornflake crust and drizzled with a sweet honey BBQ sauce.


Ingredients

  • 2 pounds (907g) boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 5 cups (140g) corn flakes cereal, crushed lightly
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 2 large eggs
  • 1/4 cup (60ml) milk
  • 3/4 cup (222g) your favorite BBQ sauce
  • 1/4 cup (85g) honey
  • 1/4 cup (68g) ketchup


Instructions

  1. Preheat the oven to 400°F (204°C) and line two large baking sheets with parchment paper.
  2. Place the chicken pieces in a large bowl and coat with flour.
  3. Combine the crushed corn flakes, salt, pepper, garlic powder, and smoked paprika in another bowl.
  4. Whisk the eggs and milk together in a small bowl.
  5. Dip each piece of chicken in the egg mixture, then roll in the cornflake mixture.
  6. Arrange the coated chicken on the baking sheets.
  7. Bake for 18 minutes, flipping halfway through.
  8. Combine BBQ sauce, honey, and ketchup in a saucepan and heat for about 5 minutes.
  9. Remove chicken from the oven and cool for 5 minutes.
  10. Pour the warm sauce over the chicken bites and stir to coat.

Notes

For added crunch, lightly spray the chicken bites with cooking spray before baking. Leftovers can be stored in the refrigerator for up to one week.
