Description

A quick, flavorful, and healthy dish featuring fresh cod in a creamy coconut lemon sauce.


Ingredients

  • 4 fillets of Cod (thick, white cod fillets)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive Oil (for sautéing)
  • 1 medium Onion (sauté until translucent)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 1 can Coconut Milk (full-fat preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the cod fillets with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the chopped onion and sauté until it becomes translucent.
  5. Stir in the minced garlic and grated ginger, cooking for about 1 minute until fragrant.
  6. Pour in the coconut milk, lemon juice, and lemon zest. Stir well to combine.
  7. Bring the mixture to a gentle simmer, allowing the flavors to meld for about 3-4 minutes.
  8. Place the seasoned cod fillets in a baking dish. Pour the coconut lemon sauce over the fish, making sure they’re well coated.
  9. Bake in the preheated oven for 15-20 minutes until the cod is cooked through and flakes easily with a fork.

Notes

Serve hot with steamed rice or a simple green salad. Store leftovers in an airtight container in the fridge for up to 2 days.
