Description

Indulgent brownies topped with smooth Baileys-infused buttercream and rich chocolate ganache, perfect for dessert or gatherings.


Ingredients

  • 1 box brownie mix plus required eggs, oil, and water as indicated on the box
  • ¼ cup Baileys Irish Cream (optional)
  • ½ cup salted butter, softened
  • 2½ cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons Baileys Irish Cream
  • 3 to 4 tablespoons heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • ⅓ cup heavy whipping cream
  • 2 tablespoons Baileys Irish Cream


Instructions

  1. Preheat oven according to brownie mix package instructions. Line an 8×8 inch baking pan with parchment paper and set aside.
  2. Prepare the brownies according to the package, substituting ¼ cup water with ¼ cup Baileys Irish Cream if desired. Pour batter into the prepared pan and bake accordingly. Remove and cool completely.
  3. In a mixing bowl, beat softened butter, vanilla extract, and sifted powdered sugar until combined. Slowly add 2 tablespoons Baileys Irish Cream and continue beating. Add heavy cream one tablespoon at a time until frosting is fluffy and smooth.
  4. Spread the buttercream evenly over the cooled brownies using an offset spatula. Chill in the freezer while preparing ganache.
  5. Combine ⅓ cup heavy whipping cream with 2 tablespoons Baileys Irish Cream in a microwave-safe bowl. Heat for 45-60 seconds until just simmering. Pour hot cream over chocolate chips and let sit for 3 to 4 minutes, then stir until smooth.
  6. Spread ganache evenly over the chilled buttercream layer. Allow to set on the countertop for 45-60 minutes or refrigerate for about 15 minutes.
  7. Lift brownies from pan using parchment paper flaps, cut into squares, and serve immediately.

Notes

These brownies can be served with whipped cream or cocoa powder. Store in an airtight container in the refrigerator for up to a week or freeze for three months.
