Description
A delicious and comforting frittata with crispy bacon, tender potatoes, and creamy eggs, perfect for breakfast, brunch, or a light dinner.
Ingredients
- 8 large eggs
- 6 strips bacon (chopped)
- 2 medium potatoes (diced)
- 1/2 cup heavy cream
- 1/4 cup fresh chives (chopped)
- 1/2 cup cheddar cheese (grated)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the chopped bacon over medium heat until it becomes crispy, about 5–7 minutes. Remove and drain on paper towel.
- Add the diced potatoes to the same skillet and cook in the bacon drippings until golden brown and tender, about 10–15 minutes.
- In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
- Pour the egg mixture over the cooked potatoes. Sprinkle the crispy bacon and grated cheddar cheese on top.
- Cook on the stovetop for about 3 minutes to set the bottom layer.
- Transfer the skillet to the preheated oven and bake for 15–20 minutes until set.
- Let cool for a few minutes, garnish with chives, slice, and serve.
Notes
Feel free to customize with different vegetables or cheeses. Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
