Description

A delicious and comforting frittata with crispy bacon, tender potatoes, and creamy eggs, perfect for breakfast, brunch, or a light dinner.


Ingredients

  • 8 large eggs
  • 6 strips bacon (chopped)
  • 2 medium potatoes (diced)
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives (chopped)
  • 1/2 cup cheddar cheese (grated)
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the chopped bacon over medium heat until it becomes crispy, about 5–7 minutes. Remove and drain on paper towel.
  3. Add the diced potatoes to the same skillet and cook in the bacon drippings until golden brown and tender, about 10–15 minutes.
  4. In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
  5. Pour the egg mixture over the cooked potatoes. Sprinkle the crispy bacon and grated cheddar cheese on top.
  6. Cook on the stovetop for about 3 minutes to set the bottom layer.
  7. Transfer the skillet to the preheated oven and bake for 15–20 minutes until set.
  8. Let cool for a few minutes, garnish with chives, slice, and serve.

Notes

Feel free to customize with different vegetables or cheeses. Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
