Ingredients
- 2 slices of bread
- 1 ripe avocado
- 2 eggs
- Salt
- Pepper
- Olive oil
- Red pepper flakes (optional)
Instructions
- Toast the bread slices to your liking.
- In a bowl, crack the eggs and whisk them together until well combined.
- Heat a small skillet over medium heat and add a drizzle of olive oil.
- Pour the beaten eggs into the skillet and scramble them gently until cooked. Season with salt and pepper.
- While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.
- Spread the mashed avocado evenly on the toasted bread.
- Top with scrambled eggs and sprinkle with red pepper flakes if desired.
- Serve immediately.
Notes
Best eaten fresh. Leftover mashed avocado can be stored in the fridge; add lemon juice to prevent browning.
