Description

A delicious and simple meal perfect for breakfast or any time of day, combining creamy avocado with fluffy scrambled eggs on crispy toast.


Ingredients

  • 2 slices of bread
  • 1 ripe avocado
  • 2 eggs
  • Salt
  • Pepper
  • Olive oil
  • Red pepper flakes (optional)


Instructions

  1. Toast the bread slices to your liking.
  2. In a bowl, crack the eggs and whisk them together until well combined.
  3. Heat a small skillet over medium heat and add a drizzle of olive oil.
  4. Pour the beaten eggs into the skillet and scramble them gently until cooked. Season with salt and pepper.
  5. While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper.
  6. Spread the mashed avocado evenly on the toasted bread.
  7. Top with scrambled eggs and sprinkle with red pepper flakes if desired.
  8. Serve immediately.

Notes

Best eaten fresh. Leftover mashed avocado can be stored in the fridge; add lemon juice to prevent browning.
